Organic Mānuka Honey & Cacao Granola
A quick-to-make, healthy granola with pops of cacao and naturally sweetened with our very own organic Mānuka honey. There’s truly no better way to start (or end) the day!

Serves: Approx. 6 cups
Ingredients
4 cups rolled oats
1 cup slivered almonds
1/3 cup unsweetened cocoa powder
1 teaspoon fine sea salt
1/2 cup melted coconut oil
1/2 cup Woodland’s raw organic Mānuka honey
2 teaspoons vanilla extract
2/3 cup unsweetened flaked coconut (or 1/2 cup shredded coconut)
1/2 cup pumkin seeds (optional)
1/2 cup cocao nibs
Method
Heat oven to 180°C. Line a large baking sheet with parchment paper, and set aside.
In a large mixing bowl, stir together oats, almonds, cocoa powder and sea salt until evenly combined.
In a separate mixing bowl, stir together the melted coconut oil, honey and vanilla extract until combined. Pour the wet mixture into the oats mixture, and stir until evenly combined.
Evenly spread the granola out on the prepared baking sheet. Bake for 20 minutes, stirring once halfway through. Remove from the oven, add the coconut on top and give the mixture a good stir. Bake for a further 5 minutes, or until the granola is lightly toasted and golden.
Remove baking sheet from the oven and transfer to a wire baking rack. Leave to cool until the granola reaches room temperature. Lastly stir in the pumpkin seeds and cocao nibs plus any other add-ins that you desire (dried cranberries are a nice addition).
Serve immediately with your choice of milk, or store in an airtight container at room temperature for up to 1 month.
