Outstanding Summer Platter with Organic Pōhutukawa Honey
Outstanding Food Producers Awards have teamed up with a handful of award winners to create an easy-to-assemble delicious summer platter that is perfect for serving over the festive season, featuring our organic pōhutukawa honey! When planning your summer platters this season, be sure to include as many ingredients from local kiwi producers as possible.

Platter Ingredients
Mayonnaise - Pepler’s basil pesto mayonnaise
Rocket
Cured meats (such as local prosciutto, bresaola or coppa)
Fresh Microgreens Pea, shoots picked
Semi-hard cheese, very thinly sliced (we used Meyer Cheese Fenugreek Gouda)
Thin slices of NZ Blue Cheese
Very thin slices of rare venison
Red witloof (or red witloof or Belgian endive)
Whipped NZ Feta Ingredients
150g creamy New Zealand feta, crumbled
150g New Zealand crème fraiche
3 tablespoons extra virgin olive oil
2 very thin spring onions, finely sliced
a small handful of coriander leaves
finely grated zest of 1 small lemon
Method NZ Whipped Feta
Put the Feta, crème fraiche and 2 tablespoons olive oil in a small food processor and process until smooth. Season with salt, if needed..
Put into a dish or two small dishes, drizzle with the remaining olive oil and top with the spring onion, coriander and lemon zest.
Step by- step Outstanding Summer Platter Assembly Instructions
Make your Kiki Seed Crackers
Choose a board or large platter. Use baking paper to add texture
Add two small bowls for the whipped NZ feta
Add whipped NZ feta to each bowl and drizzle with olive oil
Add Proper Crisps
Add red witlof
Put a dollop of mayonnaise on each cracker then top with rocket
Fill witlof with crumbled or thinly sliced NZ blue cheese, drizzle Woodland’s Certified Organic Pōhutukawa Honey over
Add cured meat and sliced fresh peach to half of the crackers, top with Robbies Peach & Ginger Chutney
Add thin slices of semi-hard cheese to remaining crackers and top with Pepler’s Plum ε Cardamom Paste
Add sprigs of fresh herbs
